Mace is the lacy red aril that surrounds the nutmeg kernel, dried to a brittle amber blade with a finer aroma than nutmeg itself. It is graded on colour, blade integrity and volatile oil content. Mace is supplied to spice grinders, seasoning houses and the bakery sector.
