Indian bay leaf, or tej patta, is a large dried leaf with a warm, mildly clove-like aroma distinct from Mediterranean bay. It is graded on leaf size, colour and whole-leaf ratio. The leaves are supplied to spice packers, seasoning blenders and the retail trade.
